Chicken Salad

Ingredients:

  • Chicken breast (cooked and diced): 2 cups
  • Strawberries or Blueberries (halved or diced): 1 cup (or omit)
  • Celery (chopped): 1/2 cup
  • Red onion (diced): 1/4 cup
  • Plain full-fat Greek yogurt: 1/2 cup
  • Keto-friendly sweetener: to taste (or omit)
  • Salt: 1/4 teaspoon
  • Black pepper: 1/8 teaspoon
  • Avocado (diced): 1 medium
  • Chopped nuts (almonds or walnuts): 1/4 cup
  • Lettuce leaves: 8 leaves

 Instructions:

  1. In a large bowl, combine the Greek yogurt, sweetener, salt, and pepper. Mix well.
  2. Add the diced chicken, strawberries or raspberries (if using), celery, red onion, avocado, and nuts. Toss until all ingredients are well-coated with the yogurt mixture.
  3. Serve the chicken salad on lettuce leave
