Cauliflower Mash

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 1/4 cup heavy cream (or unsweetened almond milk for a lighter option)
  • 2 tbsp unsalted butter
  • 1 tbsp crushed garlic
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese for extra flavor

Instructions:

  1. Prepare Cauliflower:  Cut the cauliflower into florets. Steam or boil the cauliflower until it is very tender (about 10-15 minutes).
  2. Drain and Dry:  Drain the cauliflower well and let it sit in the colander for a few minutes to ensure most of the water is removed. You can also pat it dry with a kitchen towel to remove excess moisture.
  3. Blend Cauliflower:  Place the steamed cauliflower in a food processor or blender. Add the heavy cream (or almond milk), butter, garlic, salt, and pepper. Blend until smooth and creamy. If you want a chunkier texture, use a potato masher instead.
  4. Adjust Seasoning:  Taste and adjust the seasoning if necessary. You can add more salt, pepper, or butter to suit your taste. For extra flavor, you can mix in the grated Parmesan cheese.
  5. Serve:  Serve the cauliflower mash warm as a low-carb alternative to mashed potatoes.
