BBQ Chicken Pizza

Ingredients:

For the Crust:

  • 1 1/2 cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 1 large egg
  • 3/4 cup almond flour

For the Toppings:

  • 1/2 cup sugar-free barbecue sauce
  • 1 cup cooked chicken breast, diced
  • 1 cup shredded full-fat mozzarella cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped

Instructions:

To Prepare the Crust:

  1. Preheat Oven: Preheat your oven to 425°F (218°C). Line a baking sheet or pizza pan with parchment paper.
  2. Melt Cheese: In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave on high for about 1 minute or until melted. Stir to combine.
  3. Add Egg and Almond Flour: Add the almond flour and egg to the melted cheese mixture. Mix until a dough forms. You may need to knead it with your hands to get it fully combined.
  4. Form Crust: Place the dough on the prepared baking sheet and press it into a round pizza shape about 1/4 inch thick.
  5. Pre-Bake Crust: Bake the crust for 8-10 minutes or until it starts to turn golden brown.

To Prepare the Pizza:

  1. Add Sauce and Toppings: Spread the sugar-free barbecue sauce evenly over the pre-baked crust. Sprinkle the diced cooked chicken, shredded mozzarella, and red onion over the sauce.
  2. Bake Pizza: Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
  3. Garnish and Serve: Remove the pizza from the oven and sprinkle with chopped cilantro. Allow it to cool slightly before slicing and serving.
