Ingredients:

  • 1 cup unsweetened coconut flakes
  • 1/2 cup raw almonds, chopped
  • 1/4 cup raw pecans, chopped
  • 1/4 cup raw sunflower seeds
  • 1/4 cup freeze-dried raspberries or strawberries
  • 2 tbsp sugar-free syrup (like monk fruit syrup) or 2 tbsp coconut oil
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat Oven: Preheat your oven to 325°F (163°C).
  2. Mix Dry Ingredients: In a large bowl, combine the coconut flakes, chopped almonds, chopped pecans, and sunflower seeds. If using, add a small amount of freeze-dried raspberries.
  3. Prepare Wet Ingredients: In a small bowl, mix the sugar-free syrup (or coconut oil), melted coconut oil, vanilla extract, and ground cinnamon.
  4. Combine Ingredients: Pour the wet ingredients over the dry ingredients and mix thoroughly to ensure everything is well-coated.
  5. Bake: Spread the mixture evenly on a baking sheet lined with parchment paper. Bake for 15-20 minutes, stirring halfway through, until the granola is golden brown.
  6. Cool and Store: Allow the granola to cool completely before storing it in an airtight container.
